I have a 2021 R/T AWD. Buying a trailer hitch but I’m not sure what to get. I prefer the one that hides in the bumper, I’ll just suck it up and buy the hitch cover from a TnG or something. Any suggestions?

Pretty simple. The Factory tow bar! Period. You know it designed to meet the tow ratings and tucks up under the bumper cover nicely. Easy to install as well.
Now the wiring used to be already included from the factory on the R/T and was simply tied up under the rear cover near the rear crash bar. So then you simply plugged it into the factory wiring plug on the tow bar. Now you might have to buy that wiring harness...not sure on that today but it seems the factory started leaving that out to prevent dealers from the upsell and bypassing the factory tow option.

Good info here except the MOPAR hitch is limited to 3500# tow capacity when installed after the fact, despite it being the exact same hitch that would have come from the factory. Only real concern there is one of liability were you to get into a crash or have hitch separation for some reason.

Regardless of which tow hitch you put on after the fact, you are limited (per Dodge) to 3,500-pound tow capacity.

That bit is unclear. I don't recall reading anywhere that Dodge somehow limits my 7500# rated DrawTite hitch to 3500# of tow capacity just because I put it on instead of them.

EDIT:
Whelp... there it is (in my 2018 Owner's Manual). I guess I'll continue towing heavy stuff with my evil unapproved hitch at my own risk.

Not sure about 2021, but on my 2017 GT I just bought a factory hitch, the factory wiring and then I used Alfaobd (or you can use diagFCA which I think has a subroutine that can do this) to enable the trailer wiring. I also upgraded my spare to a full size (RTs should come with a full spare). The only thing I don't have is the increased cooling capacity radiator and the load leveling shocks. It's good enough to tow my 21 foot big block jet boat.

For the hitch cover I bought it paint matched from this place.

Does the 2017 GT have the HD brakes?

Wait, mac tow capacity of 3,500 without it coming without it factory equipped? Dude seriously
Yup. On an RT I can see not having HD braking and HD cooling being an issue. However if HD braking is that important, then why does the 3.6 not come with it but is still rated at 6200 lbs with the factory towing package? My guess is that it is the cooling that limits towing capacity per FCA.

R/T's have HD cooling and HD brakes standard. Its ready to tow 7K.

I looked up a 2017 RT with tow package and HD brakes are standard but HD cooling is optional.

But then here is a 2018 RT without Tow and it has HD cooling as optional as well. So not sure why putting a hitch on after the fact drops the towing capacity?

Its too bad and sad that FCA decided to de-content the vehicles as they sought a buyer...instead of investing in them more. Previous year Hemi's automatically included the HD cooling. Heck, Korean or Jap offerings are already set up to tow...the tow package is a dealer installing the tow bar/hitch.

I think they de-rate the add on hitches as a CYA so somebody doesn't put one on a V6 model without the extras and come crying when they wreck their vehicle after towing 7400# across the Sahara at 118mph.
