the 07 Durangoi just picked up with 250k miles had a noticeable tapping sound on cold startup. The oil was about a half quart low. Did oil change and no longer hear the tapping. Will see how it sounds on cold start up in morning. With such high mileage should I consider replacing the lash adjusters?

Is this the 4.7L engine? IMO, unless you suspect excess wear or damage because of noise that won't go away, I'd take good care of it and run it as is.

As long as it goes away after startup...nothing to worry about and common with the 4.7.
I have close to 375,000 on mine and have not touched the engine, so you should have plenty of miles left assuming previous owner(s) did some reg oil changes.
I have also found the best oil to keep things quiet is ironically the least $ oil. Walmart Supertech synthetic.
