Always tow something that big with the O/D off!
The rear diff should NOT have gotten that hot!

No way should it get that hot? something is wrong back there!
 
So did the tech who did the gears put the wrong fluid in? Request a rebuild with new bearings. Your pinion will start squealing before long as I'm sure its bearing races are blue. Also, if it's a limited slip, make sure they added the additive!! That's VERY IMPORTANT or it'll chatter like a 6th grade school girl.

If he wasn't advised to do that, it's not his responsibility. I did that a few times with my new 4.10's, but not 500 miles worth.
I don't think this would cause that amount of heat, but it could cause improper wear which, if not set right from the beginning, could lead to high heat and failure.
