Does anyone know how I would go about replacing the trim around the rotary shifter? The silver shiny trim is peeling off and I wanted to replace it. All suggestions welcome thanks in advance.

Go talk to your local Dodge dealer parts guys. They can tell you what parts you can order separately, if any.
the whole rotary dial needs to be replaced unfortunately...now if you have the cash and want the new T style shifter you can swap that in but you will need a few more parts.
You didn't specifiy year, but you can order that one trim piece from the dealer, get it from a junk yard, or just go the whole re-trim route. I can't personally vouch for the kits I'm linking you to, but am currently 'eyeballing' the brushed aluminum set myself;
