Backstory is i got my thermostat housing replaced 5 months ago. I also got my entire camshaft replaced recently as in 2 months ago or so. Im getting sick and tired of this mf falling apart.

Present days for the last couple weeks my temp gauge on the dashboard goes up to the hot line. And I get a warning saying coolant is hot or whatever. After about 20 seconds it drops fast back down to the middle. And it keeps fluctuating up and down. It doesn't really go up to the red line very often. It hovers around the middle white line and a little above it.

Water pump?

I have a 2015 dd sxt 3.6L awd. 144k miles

It sounds like you have air in the system. Was the T stat housing that went in OEM? If not, you may have a flaky T stat.

Good thing is I took it to a shop to get it installed back a few months ago. Ill call them Monday. I was thinking air in the system too but why would it take so long for it to react? It was fine up until 2 or 3 weeks ago?

There may be an AC cutoff that engages if the system thinks it's overheating. When you say bone dry, are you talking about the AC lines not having condensation on them?

Sorry, when I said bone dry I meant that there's no visible wet spots anywhere in the engine bay that I can see with the naked eye

It smells bad when I rev up the engine high. It doesn't smell like gas though. It heats up hot and i get that cluster warning and then it smells like burnt rubber or if you ever smelled like a hair perm smell. But then it drops back down right to the middle. Makes no sense. No smoking under the hood. No wet spots.
 
I think the the system still has air in it.
Until you get that sorted correctly, it won't work the way it should.

Update:
Mechanic friend came by. He thinks its a stuck thermostat. Bullshit aftermarket parts fail apparently. I've also been told it could be the fan. I hope its not the fan. Do you know how I can tell if it is the fan? Can I narrow it down?
 
We don't recommend aftermarket thermostats. Start there with a Mopar stat.

Does the fan come on? There should be a low speed, but it can ramp up to a higher speed if needed. The fan should activate when you turn the AC on. Does it?
