It's still being weird. I can drive it around town and such, even sit in a crowded drive through. It will be fine the whole time.

However when i had it on I70 for 50-60 miles it was fine untill i got to Springfield, OH. The first stop light and it suddenly overheated again. 2 gallons of coolant later ant it was fine for the next 130 miles of the trip. Again i had to add a couple gallons of coolant back into the system but it has been fine ever since (maybe 200 miles later)... Then again I have kept it off the interstate too.

Sounds like you have a blown head gasket.
That's my fear... Though I've never seen a blown head gasket act like this. No smoke, no coolant in the oil, and can idle all day and never overheat.

I've not had much luck changing head gaskets on high mile motors. Last one burnt oil so bad it looked like a freight train.

I bit the bullet finally and decided to try changing head gaskets... Lo and behold I found this done on cylinder #5.

How could this have not been billowing clouds of white smoke or overheating in mere minutes?

I had a blown head gasket on a turbo mitsu 4cyl and only sign was it would overheat during a load such as going up a long hill under boost.
Coolant also disappeared slowly, but no sign in exhaust or oil.
Only when it started to miss did I pull the head and then clearly could see it.

No visible cracking or warping (that i could visibly tell anyway). And it is the 5.9. I found torque specs saying 50lbs for the first round then 105lbs on the second.

OK, 5.9L. Correct on the 1st and 2nd round TQ specs. 50 then 105.
I'd have it checked and the surface machined just to be sure. Hard to visually see .23mm which is the max out of flat acceptable for 5.9L heads.
But you could roll the dice too.

Make sure to have those heads checked for cracks before they go back on. Those 5.2/5.9 heads are known for it.

So far it's good. Got it almost completely done. Need 2 bolts for the right bank exhaust collar and an oil change. But started it up to check for smoke before wasting money on the oil.

When it stays idling it runs good. Seems to want to die when dropping back to idle though. Maybe some run time will clear that up. But not blowing smoke or overheating as of yet.
