This is probably not that big of a deal, so this is more out of curiosity than a desire for a remedy. It doesn't happen every time, but it does appear to happen more frequently. When filling up, I generally let it fill until it clicks off and leave it. On occasions when it clicks off, it literally overflows out over the "fuel cap" (yes, I know it's capless). Why does this happen? I'm not saying it's because it's capless, but it never happened on my 4Runner, so I'm not saying it isn't because it's capless. Any ideas?

specific to a certain pump or station?

My GC did that only once in all the fills I've done.. and I think it was a pump issue..

Don't believe so. It usually doesn't discriminate. At least roughly 1 out of every 10 times I fill up results in this. Though 10% doesn't seem like a lot, it's still more than I would prefer.

This was a common problem on early model Nitro's and Liberties. The rollover valve, which would prevent leaking fuel in case of a rollover did not function properly and would not allow the fuel to enter the tank properly.
A recall was eventually issued and replacing the tank was the fix.

I am not saying this is the same problem you have, but this was another Chrysler branded vehicle with the same issue.
