I'll start out with this: my 01 RT with 122K runs great and doesn't smoke at all (changed to synthetic 2 oil changes ago.)

That said, I changed the oil a couple days ago (as I always do) and only got 3-1/2 quarts out of it (yes, I pour it back into the bottles to measure how much I get out.) In the past it's always been 1/2 quart or maybe a little more short, which I've always considered "normal". Even with the negligible amount that stays in the engine, coming up 1-1/2 quarts short can't be good.

Clearly I'll have to start checking the oil level more often now but, since it doesn't smoke or leak, should I be worried? Anything I should check out? Any additives to try?

I've never measured how much oil I get OUT of the D to really know. Take a look down the TB to see if oil is inside or pooling at all. If so, that's the belly pan issue. Other than that, no smoke, no plenum oil, no leaks, no problems.

Any oil that gets by the rings can be burned in the cat and you won't see any smoke coming out the exhaust. It'll also lead to a plugged cat and a lot of expense. Check your PCV valve, could be bad and more likely than just worn engine.
 
X2 on the PCV valve if you don't find oil in TB/Intake.

My D burns about the same amount? it's been that way since day 1.
 
It's really kinda nice knowing that today we complain about that much oil usage and in the past owners of the Hudson Hornet V8 were told to bring their car in if it DIDN'T use 1 quart a month as the engine was bad.
 
Looked at my oil today after about 1500km since oil change and it was low, very low (2 liters.) Trying AMSoil 5w40 so will look if it keeps on going lower. No oil in TB and PCV valve looks fine. My mechanic says it might just be AMSoil not working great with my D. I'll probably try something else at the next oil change.

What weight were you using before?
 
Yeah, I had some issues using the thinner 5w30 Mobil 1 oil, I'd hear my lifters on startup, so I switched to 10w30 and that solved it. I've never tried AMSoil but they have some good reviews on it though! Have you checked underneath, around the valve covers, and around the front and rear seals?
